Baked Chicken


  • 1 Tbsp. Vegetable Oil
  • 1/2 cup chopped onion
  • 1 cup frozen orange juice concentrate
  • 1/2 tsp. dried thyme leaf
  • 1/2 tsp. crumbled dried leaf rosemary
  • 1/4 tsp. salt
  • dash ground black pepper
  • 1 Tbsp. soy sauce
  • 3 Tbsp. packed light brown sugar
  • 6-8 boneless chicken breasts


  1. Preheat oven to 375°F.
  2. Wash chicken, pat dry, brush lightly with vegetable oil, sprinkle with salt and pepper, then arrange in baking dish. Place in oven to bake for 20 minutes.
  3. Heat 1 Tbsp. of vegetable oil in a medium size saucepan over medium heat. Sauté the onion until softened. Add orange juice, thyme, rosemary, 1/4 tsp. slat, dash of pepper, soy sauce, and brown sugar. Simmer for 5 minutes while stirring frequently.
  4. Liberally brush the sauce over the chicken and bake for an additional 15-20 minutes longer, or until cooked thoroughly. The chickens’ internal temperature needs to reach 165°F.

Yield: 6-8 boneless chicken breasts
