Buttery Pancakes

4 teaspoons baking powder

Stir together flour, baking powder, and sugar in another medium bowl. Whisk in egg mixture until just combined.
Heat 1/2 teaspoon oil in a large nonstick skillet over moderate heat until hot but not smoking (recommended temperature skillet = 325 F). Working in batches of 3 and adding 1/2 teaspoon more oil between batches, pour 1/3 cup measures of batter into skillet and cook until bubbles have formed on top and broken, about 2 minutes. Flip pancakes with a spatula and cook until undersides are golden, about 1 minute more. (Lower heat if pancakes brown too quickly.) Serve with maple syrup.
