1 1/3 cup
1 cup pecans
2 cup all-purpose flour
2 cup sugar
2 teaspoon baking soda
2 teaspoon cinnamon
2 teaspoon double acting baking powder
3 cups grated carrots
6 eggs
Directions
Preheat oven to 325°F. All ingredients should be at room temperature.
Mix all-purpose flour, baking soda, baking powder, and cinnamon.
Beat the eggs in a separate bowl, then add the WHIRL and sugar. Stir. Blend this into the dry mixture, stirring well.
Add pecans and carrots and stir.
Bake in a
-greased and floured 2 x 9” round cake pans for approximately 1 hour and 10 minutes.
Garnish with grated carrots and pecans.
