• 1 1/2 cups milk
  • 1/2 cup dark Italian cheese blend
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon white pepper
  • 1 cup flour
  • 3/4 teaspoon ground nutmeg
  • 3 large eggs
  • 3 Tablespoon 
  • pan spray


  1. Mix dry ingredients then stir in the eggs and . Add the buttermilk and blend until smooth in a processor, blender or with an immersion blender; then stir in the Italian Blend.
  2. Heat a 10" skillet, over medium-low heat, and spray with  Pan Spray then ladle in 1 1/2 oz. of batter and tilt the skillet to spread the batter to form a 6" crepe.
  3. When the edges are brown and bubbles appear across the surface, turn the crepe. The second side will cook in approx. 2 minutes. The first side is the more attractive side, so you will want to fill your crepe with the second side up.
