Devil's Food Mayo Cupcakes

Ingredients 

PASTRY

  • 2 lb. Eggs
  • 4 lb. 8 oz. Sugar
  • 1 oz. Salt
  • 12 oz.  Cake and Icing Shortening
  • 12 oz. Mayonnaise
  • 4 oz. Milk Powder
  • 3 lb. Cake Flour
  • 1 lb. Cocoa
  • 3 oz. Baking Soda
  • 1 ½ oz. Vanilla Flavor

Directions

  1. Add all ingredients at once, eggs first.
  2. Cream on first speed for 30 seconds, then on 2nd speed for 4½ minutes.
  3. Add 2 ½ pt. water and scrape down bowl and paddle really well. 
  4. Mix on first speed for 5 minutes.
