Devil's Food Mayo Cupcakes
Ingredients
PASTRY
2 lb. Eggs
4 lb. 8 oz. Sugar
1 oz. Salt
12 oz.
Cake and Icing Shortening
12 oz.
Mayonnaise
4 oz. Milk Powder
3 lb. Cake Flour
1 lb. Cocoa
3 oz. Baking Soda
1 ½ oz. Vanilla Flavor
Directions
Add all ingredients at once, eggs first.
Cream on first speed for 30 seconds, then on 2nd speed for 4½ minutes.
Add 2 ½ pt. water and scrape down bowl and paddle really well.
Mix on first speed for 5 minutes.
