Green Beans


  • 1/2 cup skinned whole almonds, finely ground in a food processor
  • 1 garlic clove, minced
  • 1 pound green beans, trimmed
  • 2 tablespoons 
  • Salt and freshly ground black pepper to taste


  1. Cook beans in a 3-quart saucepan of boiling well-salted water until crisp-tender, about 4 minutes; drain.
  2. Heat  in a 12-inch nonstick skillet over moderate heat.
  3. Add garlic and cook, stirring, until it just begins to turn golden, about 1 minute.
  4. Add almonds and cook, stirring, until they begin to color slightly, about 2 minutes.
  5. Add beans and cook, stirring, until tender and heated though, about 2 minutes.
  6. Season with salt and pepper.
