Magic Cookies

Ingredients

  • 1 cup shortening
  • 1 ½ cups all-purpose flour
  • 1 cup light brown sugar, firmly packed
  • ½ tsp. salt
  • 1 cup granulated sugar
  • 1 tsp. baking powder
  • 2 eggs
  • 1 tsp. baking soda
  • 1 tsp. vanilla
  • 3 cups quick oats, uncooked
  • 1 1/2 cups confectioners' sugar

Directions

  1. Cream shortening and sugars together. Add eggs and vanilla. Add remaining dry ingredients. Stir in oatmeal. Chill dough, covered in the refrigerator for at least 3 hours.
  2. Preheat oven to 350°F.
  3. Roll chilled dough into balls the size of walnuts and roll in confectioners’ sugar. Place on ungreased cookie sheet and bake for 8-10 minutes.
