Magic Cookies
Ingredients
1 cup
shortening
1 ½ cups all-purpose flour
1 cup light brown sugar, firmly packed
½ tsp. salt
1 cup granulated sugar
1 tsp. baking powder
2 eggs
1 tsp. baking soda
1 tsp. vanilla
3 cups quick oats, uncooked
1 1/2 cups confectioners' sugar
Directions
Cream shortening and sugars together. Add eggs and vanilla. Add remaining dry ingredients. Stir in oatmeal. Chill dough, covered in the refrigerator for at least 3 hours.
Preheat oven to 350°F.
Roll chilled dough into balls the size of walnuts and roll in confectioners’ sugar. Place on ungreased cookie sheet and bake for 8-10 minutes.
