Mashed Potatoes
Ingredients
3/4 cup milk
1 1/2 teaspoons salt
1/3 cup
2 tablespoons chives, minced
4 pounds raw potatoes, peeled and pared
Water to cover potatoes
Directions
Place pared potatoes in 6 quart saucepan and cover with water.
Add salt and bring to boil. Cook over medium heat for approximately 20 minutes or until potatoes are fork tender, but not mushy.
Thoroughly drain cooked potatoes and transfer to mixing bowl.
Add
and mix on low speed with wire whip.
When no lumps remain, add milk and chives.
Mix for a few seconds on low speed, then when milk is incorporated, increase to high speed and whip potatoes for approximately 1 minute.
