Ingredients
- 2 lbs 1.5 oz Cake Flour
- 2 lbs Sugar
- 6.75 oz Dutch Cocoa
- 1 oz Salt
- 2 oz Baking Powder
- 1 lb
Shortening
- 1 lb Water
- 1 lb 4 oz Whole Eggs
- 13.5 oz Water
- Flavoring
Directions
1. Combine dry ingredients and

and mix one speed 1 for 1 minute.
2. Add water (ingredient #7) and mix on speed 1 using flat paddle for 1 minute.
3. Scrape bowl and paddle, then mix 5 minute on speed 2 on a 3 speed mixer, speed 3 on a 4 speed mixer.
4. Add eggs and water (ingredient #9) and flavoring, and mix on speed 1 for 1 minute.
5. Scrape bowl and paddle, then mix 2 minutes on speed 2 on a 3 speed mixer, speed 3 on a 4 speed mixer.
6. Scale into well-greased cake pans.
7. Bake at 360° for approximately 23 minutes.
