Potato Salad


  • 4 to 5 Red Bliss potatoes 
  • 1/2 to 3/4 cup of  white vinegar 
  • 1 TBSP chopped fresh rosemary
  • 1 TBSP of sugar
  • 1/4 TBSP of salt
  • 1/4 cup double smoked bacon
  • 1/4 cup diced ray red onions
  • 1/2 cup of  Deli Mustard
  • 1 cup of Heavy Duty  Mayonnaise


1. Boil potatoes whole in salted water until tender.
2. Slice each potato into 5-6 slices
3. Cover in bowl and keep warm.
4. Cook the bacon crispy, dice into small pieces and set aside.
5. In a sauté pan, heat the vinegar to a simmer. Sauté vinegar in pan, heat to simmer.
6. Add salt, sugar, and rosemary to vinegar in pan. Heat until salt and sugar are melted completely in vinegar.
7. Pour vinegar mixture over the sliced potatoes in bowl and toss together. 
8. Add in the red onion and the diced bacon. Toss together with the sliced warm potatoes and mix well. Continue to chop the potatoes.
9. Add mustard and mix.
10. Add mayonnaise and mix thoroughly.
