Oatmeal Cookies

Ingredients

Pastry
  • 3 lb. 12 oz. all-purpose shortening
  • 10 oz. raisins (moist, ground)
  • 7 lbs. 8 oz. granulated sugar
  • 2 ½ oz. salt
  • 1 lb. 8 oz. honey
  • 4 lbs. water
  • 4 oz. soda
  • 2 oz. ammonia
  • 2 oz. vanilla
  • 5 lbs. rolled oats *
  • 12 lbs. 8 oz. flour
  • 1 lb. 4 oz. non-fat dry milk
  • ¼ lb. ground cinnamon
  • ¼ oz. ground mace
  • ¼ lb. ground ginger

    Directions

  1. Mix together  and raisins.
  2. Add sugar and salt and cream together.
  3. Add honey while creaming.
  4. Dissolve water, soda, ammonia, and vanilla together. Add to mixture.
  5. *Work oats until well separated. Add to mixture, mix well to incorporate.
  6. Sift together dry ingredients and add to mixture.
  7. Bake at 350°F. (375°F for crisp cookies.)
