Shrimp Fried Rice

Ingredients

  • 1/4 cup onion, peeled and chopped
  • 1/4 cup 
  • 1 cup headless fully cooked shrimp
  • 3 medium eggs
  • 4 cups cooked white or brown rice
  • 4 tbsp. soy sauce
  • Assorted mixed vegetables
  • black pepper

Directions

  1. Heat the  in a 12 or 14-inch skillet over medium-high heat
  2. Add onions and sauté for 2 minutes.
  3. Add shrimp and cook for 2 minutes. Reduce to medium heat, add eggs and stir.
  4. Once eggs are almost cooked, add rice, black pepper, and soy sauce. Stir in assorted vegetables.
  5. Increase to high heat and fry for 3 minutes. Serve immediately.

Yield: Serves 4
