White Cake

Ingredients

  • 2 lbs. 1 ½ oz. cake flour
  • 2 lbs. 15 oz. sugar
  • 4 oz. non-fat dry milk
  • ¾ oz. salt
  • 1 ½ oz. baking powder
  • 1 lb. ¾ oz.  shortening
  • 1 lb. 11 ½ oz. water
  • 1 lb. 1 ½ oz. egg whites
  • 2 oz. water
  • Flavoring to taste
 

Directions

  1. Blend dry ingredients.
  2. Add  and 2/3 of the water and turn on mixer on speed 1 using flat paddle. Add remainder of water while mixing, Turn mixer to speed 2 and beat 1min. Scrape bowl and paddle, then mix 5 min. on speed 2.
  3. Turn mixer to speed 1 and add slowly while blending. After 30 sec. stop mixer and scrape bowl and paddle. Blend on speed 1 for 3 min. Scale 12 1/3 oz. into 8-in. round, well greased cake pans. Bake at 350°F for approx. 23 min.
