Yellow Cake

Ingredients

  • 2 lbs. 6 ¾ oz. cake flour
  • 3 lbs. 15 ½ oz. sugar
  • 3 ¾ oz. non-fat dry milk
  • ¾ oz. salt
  • 2 oz. baking powder
  • 15 oz. 
  • 1 lb. 4 ¾ oz. water
  • 1 lb. 7 ¼ oz. whole eggs
  • 8 ¼ oz. water
  • Flavoring to taste

Directions

  1. Combine dry ingredients and  and mix on speed 1 for 1 minute.
  2. Add water and milk and mix on speed 1 for 1 minute. Scrape bowl and paddle, then mix 5 minutes on speed 2 on a 3 speed mixer or speed 3 on a 4 speed mixer.
  3. Add eggs and water and mix on speed 1 for 1 minute. Scrape bowl and paddle. Mix 2 minutes on speed 2 on a 3 speed mixer or speed 3 on a 4 speed mixer. Scale into well-greased cake pan. Bake at 360°F for 23 minutes.
